Slow Cooker BBQ Shredded Pork
(I got this recipe from a book called "The $7 a Meal Slow Cooker Cookbook")

2 onions chopped                                     2 tsp chili powder
4 cloves of garlic, minced                          1 lb boneless pork loin roast (I used pork ribs)
1 jalapeno pepper                                     1/2 tsp salt
1/2 C taco sauce                                       1/3 C BBQ sauce  
1/8 tsp pepper

1.  In your slow cooker, combine all ingredients except meat, salt, and pepper.  Sprinkle meat with salt and pepper and place in slow cooker.  Cover and cook on low for 8-10 hours until meat is tender.

2.  Remove pork and shred.  Return meat to slow cooker and cook on high for 30 more minutes.

This makes great sandwiches.

Yogurt Chicken Paprika
(This also came from  "The $7 a Meal Slow Cooker Cookbook")

6 boneless, skinless chicken thighs (I used chicken breasts and it was fine)
1/8 tsp pepper                                       1/2 tsp salt
1/4 C flour                                             1 onion, diced
1 T olive oil                                            1 C Chicken stock
1 T lemon juice                                       2 T cornstarch
1 C Plain lowfat yogurt                           2 tsp paprika

1.   Season chicken with salt and pepper. Roll in the flour to coat. In large skillet, heat oil over medium heat. Add chicken and brown on both sides, about 4 minutes total.  Add onion, stock, and lemon juice; bring to a simmer.

2.  Place in 3.5 - 4 qt slow cooker.  Cover and cook on low for 7 - 8 hours.

3.  Near the end of cook time, combine cornstarch, yogurt, and paprika in a medium bowl.  Add to slow cooker; stir, then cover and cook on high for 30 - 40 minutes or until sauce is thickened.

Country Pork Ribs
(This came from a slow cooker book, but not sure which one)

3 lbs country pork ribs                      
1 medium sweet onion, peeled and diced (I just peel and place big pieces in the slow cooker.  Easier to pick out for those picky onion eaters)
1/2 C Maple syrup (I did not have maple syrup and had to use pancake syrup.  This worked fine)
2 T light brown sugar                                2 T soy sauce
1/2 tsp ground cinnamon                           1/2 tsp ground ginger
1/2 tsp ground allspice                              3 gloves of garlic, peeled and minced
1/4 tsp black pepper                                 optional: cayenne pepper or dried red pepper flakes to taste

1. Cut ribs into individual ribs.  Add the ribs and onion to the slow cooker

2.  Add the syrup, brown sugar, soy sauce, and spices to a bowl.  Stir to mix.  Pour this mixture into the slow cooker.

3. Cover and cook on low for 8 hours or until the meat is tender.
